Recipe: No-Bake Brownies

Four wholesome, nutrient-rich ingredients combined in a few minutes for a scrumptious, raw brownie? Yes, your wishes just came true! Serve with a side of vegan whipped cream (recipe below) and fresh fruit for a delightful dessert, or as a quick, healthy treat for your next picnic! 

Ingredients

  • 1 cup raw walnuts 
  • 1 cup large dates, pitted 
  • ¼ cup cacao powder 
  • 1 pinch of sea salt 

Directions

Place the raw walnuts in a food processor and process until powdered. Add dates one by one, with the processor running. Add cacao powder and salt slowly until incorporated. Open the food processor and feel the dough with your fingers. It should hold its shape. If the dough is too crumbly, add one teaspoon of water and process again. Remove dough from the processor and press it down on a dish. Cut into squares or roll into small “bites.” Can be rolled on coconut flakes or other toppings. 

Prep time: 10 minutes 

Serves: 3-4

Vegan Whipped Cream 

Ingredients

  • 1 cup coconut cream, refrigerated in advance 
  • 1 tablespoon maple syrup 
  • 1 teaspoon vanilla extract 

Directions

Place the coconut cream in a bowl and whisk vigorously until stiff, for about 5 minutes. Add the maple syrup and vanilla, whisk for another minute, and serve. 

Prep time: 10 minutes 

Yield: about 1 cup
