Recipe: Watermelon Lime Mint Agua Fresca

Cheers to the last stretch of summer! 

  • Preparation time: 15 minutes
  • Makes 1/2 cup syrup; 4 drinks


  • 1 1/4 water, divided
  • 1/4 cup sugar
  • 2 Tbs roughly chopped fresh mint
  • 4 cups cubed, fresh watermelon*
  • 1 Tbs fresh lime juice
  • Sparkling lime-flavored water (optional)
  • 4 sprigs of fresh mint (garnish)
  • Lime wedges (garnish)

*variations: Use pineapple or other melon instead of watermelon. For Fall or Winter, try Orange and Pomegranate with Rosemary Syrup. 


  1. Combine 1/4 cup water with the sugar and chopped mint in a small suacepan
  2. Bring to a boil over medium heat, then simmer for about 5 minutes or until all the sugar is dissolved. Remove from heat and cover. Allow mixture to steep for 10 minutes so the mint can infuse the syrup. Strain the syrup and set aside. 
  3. In a blender, puree the watermelon. Add the remaining water, 1/4 cup at a time until smooth. Pour mixture through a strainer into a pitcher, discarding the solids. 
  4. Stir in the lime juice and 1 tablespoon of mint syrup
  5. Pour 1/2 cup of juice into an ice-filled, 8-ounce glass. Adjust consistency with sparkling water (or more ater) and seasoning with more lime juice and/or syrup to taste. Garnish with fresh mint.
