Nourishing Immune Support Soup

As the chill of winter settles in and the seasons change, our bodies often crave comforting and immune-boosting nourishment to ward off seasonal threats. One delightful way to fortify your defenses is with a hearty bowl of immune-boosting soup. In this recipe, we harness the potent and warming qualities of ginger, turning it into a culinary ally that not only adds a burst of flavor but also helps heat you from the inside out.

Ingredients

miso, chicken, vegetable or mushroom broth

small yellow onion, chopped

tbsp grated fresh ginger root (or use as little as 1 teaspoon, to taste)

cloves garlic, chopped or crushed (or use as little as 1 clove, to taste)

1⁄2 cup shiitake mushrooms, sliced

1⁄2 lemon, juiced

1 carrot, grated

tbsp fresh, minced parsley

1 stalk lemongrass, outer part removed

Instructions

Combine the broth, onion, ginger, garlic, mushrooms and simmer for 15 to 20 minutes. Remove from the heat and add lemon juice, carrot, parsley, and lemongrass if using. Put cover on pan and steam for 5 minutes. Remove lemongrass before serving; eat up to 4 times a day.
