Nutrition & Exercise Science

Nancy is an associate professor and core faculty in the Department of Nutrition and Exercise Science at Bastyr University.

 

 

Biography

Ms. Perlot teaches courses focused on food safety, food science, food and culture, food service business management, and culinary arts. Her food systems interests include the intersectionality of food systems, gender, and poverty. Additionally, she is interested in food geographies, food policy, and law. Nancy enjoys spending time with her family. Nancy also enjoys the ocean and spending time daydreaming about opening a neighborhood bistro where people can gather and share a meal together.

Research Interests

Her recent research investigates diversity, equity, and inclusion as expressed in the food system in the setting of education, labor and community access to food. I am particularly interested in how the culinary industry is affected by student diversity in culinary education and if there are more significant impacts in the food system at large.

Research highlights

June 2016: Presented research at the University of Toronto at the joint conference of the Association for the Study of Food and Society (ASFS); the Agriculture, Food and Human Values Society (AFHVS); and the Canadian Association for Food Studies (CAFS).
