Pumpkin Pie Overnight Oat

They are a decadent and satisfying breakfast you can have plain or customized to any combination imaginable. For the holiday season, we’ve created a pumpkin pie version!

Ingredients
• ⅔ cup unsweetened non-dairy milk of choice
• ½ cup rolled oats
• ⅓ cup non-dairy yogurt
• 1 tablespoon chia seeds
• 1 tablespoon maple syrup (or sweetener of choice)
• ½ cup plain pumpkin puree
• 1 teaspoon pumpkin pie spice
• ½ teaspoon vanilla extract
Method
1. In a jar or container with a tight-fitting lid, mix together all the ingredients
2. Close and refrigerate for a minimum of 4 hours or overnight
3. Enjoy in the morning cold or microwave for 30-60 seconds to enjoy warm
