Have you been on the Autoimmune Protocol or other elimination diet and are looking to up your skills in the kitchen? Join us for an advanced, hands-on class where you will learn how to batch-cook and prepare allergen-free meals more efficiently. Class date: April 8, 2018 | 9:00am - 12:30pm Course instructors: MICKEY TRESCOTT, NTP KATE JAY, NTP

In this class, you will be given a brief overview of the Paleo Autoimmune Protocol and how you can use it as a tool to get to the root of your food sensitivities and live better amid chronic illness. You will also get hands-on instruction on how to cook healing foods and recipes that are free from grains, beans, legumes, eggs, dairy, nuts, seeds, and nightshades.

This class will be taught in Bastyr’s nutrition kitchen, and students will get a chance to prepare a couple of recipes with instruction from the instructor as well as join in a community Autoimmune Protocol lunch at the conclusion of the class. Students will leave with the cooking skills needed to prepare their own allergen-free meals at home and better able to plan and execute an elimination diet.

After completipon of this class you will be able to:

  1. List the foods to avoid and include while on the Autoimmune Protocol
  2. List the basic tools necessary in every “real food” kitchen
  3. Demonstrate the basic ways of cooking and preparing meat and vegetables, and the pros and cons of each method.
  4. Plan and execute a batch-cooking session to prepare for the week ahead

COURSE NOTES:  Please wear closed-toe footwear and bring a hair tie if you have long hair. 

Location: Bastyr University Kenmore Campus, Nutrition Kitchen. 
Bastyr University is housed in an older facility with fluctuating interior temperatures; it is advisable to wear layers. Also, Bastyr is a “fragrance-free” campus

Maximum for this class is 20 persons. A second class is offered on Sunday April 8.

Your instructors: 

MICKEY TRESCOTT, NTP, is a Nutritional Therapy Practitioner, chef, blogger, and best-selling author of The Autoimmune Paleo Cookbook and co-author of The Autoimmune Wellness Handbook. She is the creator of AIP Batch Cook, a video-based cooking program that teaches users how to prepare allergen-free meals in their own homes. Mickey teaches cooking classes and seminars both online and at various venues around the country. She serves on the board of directors for HeyHashi, an advocacy organization for those with Hashimoto’s disease. In 2012, Mickey founded, which later became, a website featuring recipes and resources for those seeking autoimmune wellness and serving millions of users annually. She lives in the Willamette Valley, Oregon.

KATE JAY, NTP, is a Nutritional Therapy Practitioner, Autoimmune Paleo Coach Practitioner, trained chef, blogger and author of the eBook, Healing Eats: 25 Recipes to Heal the Gut while Soothing the Soul. In 2014, Kate founded, a website sharing recipes with those following the Autoimmune Protocol, in addition to other healing protocols. She also contributes a regular monthly recipe to the website Kate practices Nutritional Therapy, specializing in gut health, blood sugar regulation and autoimmune disease wellness, both online and in Vancouver, BC where she lives.
