This course will teach you the basics of nutrition science focusing on whole foods as well as plant-based culinary skills. This course consists of four modules, each with a pre-recorded 25-minute lecture and a 2-hour live cooking class. All course content including lectures, links to join the live classes, menus, recipes, and grocery shopping lists, will be available to participants via a Canvas learning page. Participants may take an optional quiz at the end of the course to review concepts learned. Participants that pass the quiz will receive a certificate of completion.

Week 1: Plant-Based Proteins (October 8, 2022)
              Menu:  Spaghetti Squash with Tofu Ricotta and Tomato Sauce

Week 2: Herbs, Spices & Inflammation (October 15, 2022)
              Menu:  Green Herby Italian Soup & Sage Sweet Potato Biscuits

Week 3: Gut Health (October 22, 2022)
              Menu:  Probiotic Chia Pudding, Prebiotic Homemade Granola, and Fermented Carrots

Week 4: Intuitive Eating (October 29, 2022)
              Menu:  Vegetable Bolognese Pasta and Kombucha-Miso Kale Salad with Quinoa
